Lakes Edition's Cherished Fish Recipes

So you've caught a fish now what?

Pickled Blue Gill
---------------------------------------
12 - 45 1/4 tsp Allspice
2 Cups of Vinegar 2-3 bay leaves
1 Cup of Water

Salt Fish for frying and keep refrigerated 12 hours. Combine remaing ingredients in a pot and bring to a boil. Add fish and boil for an additional 7 - 8 minutes. Put fish in fruit jar add liquid to the top and seal or serve as soon as chilled.

Neil Hesselman's Secret Fish Fry Recipe

Lay the fish fillets out and lightly pepper and salt them by hand
(You can use Mrs. Dash table blend also)
Dip in beaten egg.
Roll in 1/2 mixture of white crackers crushed.
and 1/2 potato chips crushed

Make sure you roll several times until fully coated.
Deep fry in 1" of vegetable or canola oil.
For larger batches use a fish fryer

Fisherman's Delight

6 pan-dressed small fish  1/4 cup yellow cornmeal
1/4 cup of evaporated milk and/or 1/4 cup breadcrumbs
1-1/2 tsp of salt and/or 1/4 cup of parmesan cheese
dash paprika pepper 12 slices of bacon
1/2 cup of flour

Clean, wash, dry fish Combine milk, salt, and pepper. Combrin flour, paprika and any combination of dry coating of cornmeal etc.


Dip fish in milk mixture and roll in flour mixture. Fry bacon in a heavy fry pan about 4 inches from hot coals until crisp. Remove bacon reserving fat for frying. Drain bacon on absorbent paper. Fry fish in hot fat for 4 minutes. Turn carefully and fry for 4 -6 mintues longer or until fish is brown and flakes easily. Drain on absorbed paper and serve with bacon.

Crappie In The Grass

12 slices of bacon 1 cup of raw onions
One pepper sliced   

Carefully cleaned, and scaled with head and tail on
insert on strip of bacon and 2 slices of onion into fish.
Put a little bit of salt and pepper on each fish. Dig a trench 1 foot deep and wide enough to hold the fish.
Build a fire with coals until good and hot. Remove half of them with a shovel. Stoke remaing coals and cover with one inch of grass. Put fish on and cover with grass, and add remaining coals and cover with arth. In one hour fish will be done.
